Non-Violent Christmas 2016



Gravy, mixed frozen vegetables, mashed potatoes, vegan meat, festive portobello mushroom wellington, herb infused roast potatoes.


Cupcakes, apple and cherry pie, chocolate bark, chocolate, cookies, failed pavlova, and brownies.


·         Fry’s country mushroom pie.
·         Coke float using dairy free ice cream.
·         Little Island’s coconut caramel ice cream.

·         Fluffy one bowl sugar cookies by Minimalist Baker http://minimalistbaker.com/fluffy-1-bowl-sugar-cookies-vegan-gf/ I used flour instead of the gluten free flour and almond flour but this recipe is for gluten free cookies. I also added lemon juice into the icing, and I only baked the cookies for 7 minutes at a time as my father has a tiny convention oven and as you can see, the cookies are tiny.
·         Caramel sauce to put in chocolate: adapted from http://www.foodnetwork.com/recipes/ree-drummond/easy-caramel-sauce-recipe.html
      Pack a cup of brown sugar, and add it to a pan. Mix 1 ½ tablespoons of melted dairy free margarine with 6 ½ tablespoons of dairy free milk, then pour it into the pot. Add 4 tablespoons of dairy free margarine, a pinch of salt, and a tablespoon of vanilla extract. Heat the pan to boil, then simmer for about 5 minutes, pour the contents of the pot into a jar, and then refrigerate for about 3 hours.
·         Failed pavlova…. There are four possible reasons it failed 1) I can’t do pavlovas and I couldn’t pre-vegan too. 2) I used a convention oven 3) I didn’t test the mixture with a toothpick 4) I made two instead of three like the recipe called for. ·         Apple and cherry pie: thinly slice about 3-4 apples depending on your tin. Add ¼ cup of water, ¼ cup of brown sugar, 1/2 teaspoon of cinnamon into the pan with the sliced apples and cook until the apples are tender. In the tin you’re going to use, butter it up with dairy free margarine or oil, then put pastry. I used New Ways’ pastry, the one that’s been approved by the Vegetarian society. Add some chopped cherries to the pan, then scoop the solids into the tin. Use scissors to cut the rest of the pastry to make a lattice topping. Glaze with dairy free milk.

Christchurch so far


So I left Japan on the 29th of November and have been back in my hometown since.




12 degrees, people in jackets, and grey skies. It's definitely a New Zealand summer : D




Coffee culture: a carrot muffin, a raw caramel slice, a bowl of almond breeze barista blend mocha, and a black coffee.

Vegan options!!!


I made my dad and brother burgers. They admitted that it tasted like meat and had they not been told it was vegan, they wouldn't have known. 


Vegan pizza from Hell's pizza. I think I'm going to hold the jalapenos next time as it was too spicy! Good! But spicy!

 It's lovely living in Christchurch again and not being surrounded by millions of people.

And dem vegan options. It's definitely not a vegan world and I made a mistake with crisps (the number 635 is not vegan) but still, there are a hell of a lot more options than there were in Japan so : D 

The Shroom Room

My friend, her mother, and I went to The Shroom Room in Lyttelton today. I've wanted to go since I heard about it as it's a veggie cafe with plenty of vegan and gluten free options. It's pretty chilled and I recommend it : D

Hours are 8am-4pm.






I had an almond milk mocha, my friend had a tumeric cashew milk latte, and her mother had a cashew milk latte. 

I didn't even get to try the Breakfast menu as there was good food in the cabinet as it was. This was a filo I had that was filled with cashews, lentils, and spinach. 


I had a chocolate soy milkshake with soy ice cream, and a chocolate cake. My friend had a raw chocolate cheesecake.

I adapted my recipe from https://kimberlydioszeghy.com/2013/12/04/sometimes-i-say-dumb-things/ as I didn’t have some of the ingredients. Mix 2/3 cups of canola oil with half a cup of dairy free milk, and one teaspoon of vanilla. Then add one cup of sugar, half a cup of brown sugar, four cups of flour, one teaspoon of baking soda, one teaspoon of baking powder, one teaspoon of salt, one teaspoon of nutmeg, one teaspoon of cinnamon. Wrap it up or pop it into a reusable resealable bag and freeze for at least an hour. This batch melts easily so take a bit by bit when you roll it. I used my hands to press the dough flat and using a cookie cutter, but I’m sure it’s fine to add flour to make it less sticky and use a rolling pin. I had a mini oven at the time, but I heated it up and only had the cookies in for a few minutes at a time to keep the softness as my cookies were tiny. For the icing sugar, I put three tablespoons of water, one tablespoon of cocoa powder, and just added icing sugar to desired texture and spread that on the cookies.
